THE EASIEST TACOS EVER

Seriously though folks. Ain’t no joke. And you can use whatever meat you want.

RABBIT TACOS
– 1 rabbit, parted out if you so desire, whole rabbits work just fine
– 1T southwest/taco/fajita seasoning
– 1 can of your favorite salsa
– 1 can diced tomatoes & green chiles
OPTIONAL:
– 1 small can tomato sauce
– 1/4 to 1/2c broth/stock

+ Take your protein, rinse, pat dry, & sprinkle with the seasoning.
+ Place seasoned protein in crock pot.
+ Add salsa & chiles
+ If the salsa & chiles don’t almost completely cover the meat, add the sauce and/or broth until the meat is almost entirely or completely covered.
+ Crock pot on low 6-8 hours.

Boom. Done. Dinner is served! If you want to make your tacos off the charts delish, prepare in the following way:

FULL TACO DINNER
– Corn tortillas
– Half one red onion, diced
– Cotija cheese – crumbled
– Guacamole
– Onion salad (recipe below)
– Sour cream
– Chipotle hot sauce

First off, toast your corn tortillas in a hot pan (med high/high heat) for 20-30 seconds on each side. This is the OPTIMUM way to heat your tortillas. A grill or open flame works even better, but we don’t all have those luxuries now do we?!
Anyway, once the tortillas are toasted, take your meat & add it to the tortilla. Top next with the cheese, then with the red onion. Add guacamole & sour cream. Top with the hot sauce. You’ve got a pretty near authentic taco! Serve with the onion salad (recipe below) for an extra kick!!

ONION SALAD
– 1 large red onion, sliced
– 2-3 habaneros OR 7-10 green chiles, thinly sliced
– 1T olive oil
– juice of 3 limes
– salt & pepper to taste

Combine peppers & onions. Combine oil, limes, salt & pepper, pour over peppers & onions. Done. Refrigerate for at least an hour before serving.
